Today, we have the pleasure of interviewing Seandel Gibson, a talented Chef, Food Blogger and Author of The CALABASH Cookbook: Flavorful Caribbean, American and Asian inspired recipes made simple.
Hi, Great to have you with us today! Please tell us more about your journey.
I am originally from the South American country of Guyana, which has strong cultural connections to the Caribbean. I was immersed in West Indian food and cooking since my early childhood. At a young age, I learned the basic techniques and styles of authentic Caribbean cuisine while observing my mom in the kitchen; It was from her that I drew my passion for cooking which lead to my love affair with food.
I enjoy creating and recreating recipes with cooking enthusiasts in mind.
Please tell us about your book, The CALABASH Cookbook: Flavorful Caribbean, American and Asian inspired recipes made simple.
Calabash is a colorful collection of fresh and simple recipes. My goal is to take you on an adventure that draws upon the vibrant influences from the melting pot that is the Caribbean, from East Indian to West African, Chinese, American, and the indigenous Amerindians. When “Caribbean” and “food” are thrown together in a sentence, we tend to think “Jerk Chicken, Rice, and Peas” or “Chicken Curry,” these are delicious, but they are just fragments of the whole story. My recipes range from Caribbean- style variations of well-loved and familiar foods—for example, curried dishes to Asian-inspired- shrimp sushi stack—and my favorite, bake & saltfish, not forgetting the southern style-shrimp and crab topped salmon.
Food is the Centerpiece of all Caribbean households. No matter how many people you are entertaining, there is always something gravitating you towards the kitchen to whip up some food. There is always more than enough to go around, even with unexpected visitors. Yet, not a single scrap remains by the time the last person would have left your home.
